Bao buns
We believe we have the greatest job here at Tbc and get to work on some fantastic projects interesting concepts and great food from working with a Chinese bao bun street food company to vegan and plant based restaurants to Japanese onsen and spa food offerings the companies we work with are varied and exciting to work with.

BAO BUNS STREET FOOD

BAO BUNS
These charcoal buns were a fantastic additional along with the more traditional buns we paired these with a marinated octopus finished on a konro grill and they looked and tasted amazing.

DUCK BAO
hoisin and confit duck bao ,fennel and orange slaw this was a firm favourite across the board.
SAITAN BAO
We also developed vegan variations and used seitan marinated in oyster sauce and finished on the konro grill served with kimchi for a flavour hit our guys loved this even though most are avid meat eaters they couldn't deny this was a great alternative.

SLOW COOKED PORK BELLY
slow cooked pork belly kang pak marinade finished on the konro grill served with crispy pork skin and wild garlic, ginger and chilli slaw.

SWEET BAO BUNS

honey and fennel ice cream with matcha tea and fresh honeycomb

moon cake spiced bao bun with mango and lychee ice cream
chocolate ice cream and caramelised banana blossom.

This was a fantastic project to work on both from a creative point of few and also incorporating traditional flavours and more unusual flavour combinations the client and the whole team really enjoyed this process .

carpaccio of butternut squash, marinated in cardamon and orange ,pickled wild garlic flowers.

GARDEN SALAD
pickled and cured vegetable salad, allium oil, wild shoots and flowers .
HERITAGE TOMATO
salad of heritage tomato, salted, dried  and compressed, nasturtiums, borage flowers.

COURGETTE FLOWERS
tempura stuffed courgette flower ,wild garlic pesto .

miso cured red cabbage ,sour wild cherries .

TAPIOCA
tapioca cracker beetroot yogurt and wild flowers.
GNOCCHI
potato gnocchi ,wild garlic pesto and vegan parmesan.
